New Years Eve Tasting

Réveillon Dinner!

Réveillon is a long dinner held on the evenings preceding Christmas Day and New Year's Day.  The name of the dinner is based on the verb réveiller (meaning “to wake”) because participation involves staying awake until midnight and beyond

 FIRST- yellow fin tuna, avocado, grapefruit, espellette

 SECOND- cassoulet, smoked winter vegetables

THIRD- oxtail daube with scallops, wild mushroom, baby carrot, pearl onion

FOURTH- basque cake, black cherry preserves, malted gelato
