An exploration of the history, science, politics and events which helped make whiskey America’s spirit of choice. We will define American whiskies, how they are produced, how to assess the quality of a whiskey and take a look at two key whiskey cocktails. A seminar for those with a basic knowledge of spirits and the whiskey category.
This is a rare consumer focused class taught by Peter Vestinos aimed at true enthusiasts of whiskey.
This seminar will cover:
Whiskey Defined: What does is mean to be legally designated a whiskey, with a focus on American whiskies.
History: A brief global history of whiskey, with a focus on its role in American history.
Production: The step-by-step processes of producing a whiskey, from grain to glass.
Assessing: How to taste whiskey and assess its quality.

Peter Vestinos is an award-winning bartender with years of experience designing and implementing cocktail programs, training bartenders and sales teams, and consulting with spirit brands. With over 13 years of experience in the bar and restaurant industry, he has worked at all levels of the business including behind the bar, distribution and supplier. He currently serves as the Chicago chapter President of the United States Bartenders' Guild and is Beverage Director for The Betty and Sparrow.

Biography, The Winchester: Executive Chef, Duncan Biddulph:
Featured in Best Chefs America 2013, a peer-review based “chefs guide to chefs,” and named one of Time Out Chicago’s “20 Chefs to Watch” in 2011, native Chicagoan Duncan Biddulph returns to Chicago after spending a year off in Nashville to now become the new Executive Chef of The Winchester.
Duncan’s career began after several years spent gathering invaluable on-the-job experience in kitchens throughout the country. Biddulph then attended culinary school at the Illinois Institute of Art. While his formal education was conducted at ILIA, Duncan’s formative training was earned through hours of hard work in the kitchens of industry favorites like Lula Café in Logan Square—one of the original Chicago restaurants grounded in the local/sustainable ethos. Working his way up from brunch cook, Biddulph also honed his instincts and sharpened his unique cooking sensibilities under the guidance and mentorship of Lula Café owners Jason Hammel and Amalea Tshilds. At Hammel’s urging, Biddulph then took time to travel throughout Europe, soaking in new techniques, ideologies and cultures while working in authentic Italian and English restaurants.
Following his travels, Duncan was quickly tapped to take over at acclaimed West Town eatery Rootstock, stepping into his first Executive Chef position. Biddulph’s seasonally focused small plate program was hailed by Chicago media and food lovers alike. After three years at Rootstock, Duncan Biddulph stepped into his next role as Executive Chef of Kinmont, where he focused on sustainably sourced seafood before taking a year long break from the industry in 2015 to spend time with his brand new wife, his dog and to just sit back and enjoy married life.
Now, in 2016 Biddulph returns to his hometown and to the restaurant world with much excitement to take the reigns in the kitchen alongside The Winchester’s owner, Chris Pappas at the all-day West Town café.
Réveillon is a long dinner held on the evenings preceding Christmas Day and New Year's Day. The name of the dinner is based on the verb réveiller (meaning “to wake”) because participation involves staying awake until midnight and beyond

Join Meals on Wheels Chicago and nearly 800 guests at the 27th Annual Celebrity Chef Ball, where you will sip, savor, mix and mingle alongside top chefs from both Chicago and culinary hotspots around the country.
The VIP Chef's Table will begin at 6:00pm with a VIP reception, followed by an intimate dining experience. Seated in small clusters, each served by 3 chefs and a mixologist, guests will enjoy a 6-course dinner, an array of pastry specialties, and a live auction. A VIP Chef's Table ticket also includes entry to the Chef's Tasting Party.
At the Chef's Tasting Party, partygoers will indulge in over 40 chef stations throughout the venue beginning at 8:30pm. Sampling signature dishes and specialty cocktails, guests will have the opportunity to interact with each chef. Guests will also enjoy a silent auction, photo booth and more!
The Celebrity Chef Ball is one of the longest running culinary fundraisers, raising more than $200,000 each year in support of MOWC's mission to promote independence for senior citizens and individuals with disabilities. This event generates revenue that provides for more than 40,000 meals annually. Please join us in our efforts to help Chicagoans in need!

Join Foxtail + Moss in The Winchester's airy second story private event space, the Sun Room, for an afternoon of mingling, making, brunch, and punch! In this three hour workshop, artist Taylor Mauch will guide you in creating a custom dream catcher. Using soft threads, feathers, and beads, Taylor will show you how to knot and weave a dreamy DIY wall hanging.
We will also enjoy brunch and punch with a specially selected menu of some favorite Winchester dishes.
